Here in Lake Success, we had a themed dinner featuring Mexican cuisine. Residents enjoyed a starter of chicken tortilla soup, entrees of fresh shrimp quesadillas, homemade beef empanadas, and nachos with chicken and melted cheese. Warm churros topped with vanilla ice cream was a delightful ending to a fantastic meal.
