Recipe for Stuffed Dates
Stuffed dates can be made with a variety of fillings and are a mainstay in Middle Eastern cuisine. For the crushed nuts below, we used pistachios, almonds, and walnuts, but feel free to use whatever you like best!
Ingredients
- 1/2 cup cream cheese, softened
- 2 Tablespoons honey
- 16-18 medjool dates, sliced lengthwise and pitted
- 4 Tablespoons crushed nuts
Directions
- Place cream cheese and honey in a medium sized bowl. Beat with an electric hand mixer for 30 seconds to 1 minute, until smooth and creamy. Refrigerate mixture for about 10 minutes until chilled.
- Using a piping bag and round nozzle, fill the dates with the cream cheese mixture. (If a piping bag isn't available, you can use a Ziploc bag with the corner snipped open, or you can use a small teaspoon.)
- Place the crushed nuts in a small bowl. Place one date, cream cheese top down, into the crushed nuts. Turn back over and place on serving platter.
- Enjoy!
Recipe for Liptauer
Liptauer is a cheese spread originating in Slovakia. It's traditionally eaten over rye bread or pumpernickel toast, or enjoyed as an appetizer with crackers. If sweet paprika isn't available, smoked paprika is an acceptable substitute in equal parts.
Ingredients
- 1 cup cream cheese, softened
- 1/2 cup salted butter, softened
- 1 garlic clove, minced
- 2 Tablespoons onion, finely chopped
- 1 Tablespoon capers, chopped
- 1 1/2 teaspoon sweet paprika
- 1 teaspoon caraway seeds, ground
- 1 teaspoon prepared mustard, like Dijon
Directions
- Combine all ingredients in a medium mixing bowl and blend using an electric hand mixer.
- Refrigerate the spread for at least an hour before serving.
- Serve over bread or crackers! Spread will last for 1-2 weeks in the refrigerator.
